About Cato Corner

Elizabeth MacAlister began milking cows and making cheese in 1997 as a way to keep her farm sustainable, and her son Mark Gillman joined her in 1999. The business has grown to include a staff of twenty full and part time workers who help to tend the herd and make and sell the cheese.

Cato Corner Farm milks between 40 and 50 Jersey cows year-round. The cows are fed a grass-based diet that includes six to seven months of pasture grazing followed by local hay in the winter, supplemented with a small amount of grain. We make primarily raw milk cheese in a wide range of styles, including sharp aged cheese, mild cheeses, pungent washed rinds and blue cheese. Since 2020 we have introduced a line of pasteurized cheeses including two bloomy rind cheeses and a Bulgarian feta. 

All of our cows – and all of our cheeses – have their own unique names!
