Abbey of Regina Laudis
The Abbey of Regina Laudis is a Benedictine Abbey located in Bethlehem CT. Land stewardship, including agricultural work is traditional to Benedictine Abbeys
throughout the centuries. Within that tradition we have had a state licensed microdairy since 1976. With the milk from out Dutch Belted dairy herd we make a
variety of products, including a traditional Saint Nectaire-style cheese we call Bethlehem Cheese. It is an aged raw milk cheese, made with no added cultures.
We also make an aged Alpine style cheese called Benedic. We make several soft cheeses, including ricotta, mozzarella, and feta. The purpose of our dairy is to
contribute to the sustenance of the community, and to have a little to sell. Our products are sold, in limited amounts and seasonally, at the Abbey Art Shop, New
Morning Market in Woodbury, and March Farms Store in Bethlehem.
